1 cup semisweet chocolate bits

1/2 teaspoon vanilla

1/4 teaspoon baking powder

1/4 cup all-purpose flour

2 1/2 cups pecans chopped coarse

2 eggs

3/4 cup sugar

8 ounces semisweet chocolate

Preheat oven to 350 degrees. Line cookie sheets with parchment paper or
aluminum foil. Melt the semisweet chocolate and the butter in a small pan over low heat, stirring until smooth, or in the microwave. Sift together the flour, baking powder, and salt. In a bowl beat the eggs, sugar, and vanilla at high speed until well combined.

Slowly beat in the cooled chocolate, then the dry ingredients, until just blended but smooth. Stir in the chocolate bits and the nuts. Drop by heaping teaspoonfuls, 1 inch apart, onto prepared cookie sheets. Bake 10 to 12 minutes, taking care to not overbake. Remove from oven and cool on a rack. May be made ahead several days or frozen.

1 cn sweetened, condensed milk

1 ts vanilla extract pn salt almonds for garnish

2 squares unsweetened chocolate

3 c sweetened, flaked coconut

Heat in a double boiler, 1 can sweetened condensed milk and 2 squares of unsweetened chocolate, until chocolate is melted. Stir until mixture is smooth. Pour over a bowl containing 3 cup of sweetened, flaked coconut. Add 1 tsp of vanilla extract and a pinch of salt. Mix well until coconut is completed coated.

Drop on a cookie sheet which is line with parchment paper, by stipules. Press a whole almond into the top. Bake at 350 degrees f. For 10 to 12 minutes. Check at 8 minutes, as bottoms of cookies brown quickly. Remove from oven, cool, remove from pan.

What Started All of the Creative Cookie Ideas?

Cookies are cookies, right? Not to me. When you eat a cookie, you look for a specific flavor, texture and softness. It is very common to get the perfect combination of these in a chocolate chip cookie, but peanut butter cookies have been eluding me for decades. I highly dislike crunchy cookies and who had ever heard of a soft peanut butter cookie? I love peanut butter but because peanut butter cookies were always crunchy I could not get beyond the crunchiness to even want one. I eventually resolved to simply avoid them and stick with the classic fail safe chocolate chip cookie or brownies when at parties. Finally, my love for peanut butter got the best of me and I started my quest: The search for a soft peanut butter cookie recipe.

I started out with a basic cookie recipe that had a phenomenal taste to it. I tried various techniques of baking to try and get them soft. I undercooked them, I increased the temperature, I lowered the temperature, I even baked them on the top rack with a pan underneath so they would cook on top and not in the middle to hopefully keep them soft. None of these ideas worked. I tried adjusting the baking soda amount up and down and then combining these changes with the baking technique changes. Still no luck. I adjusted the shortening amount and then the peanut butter amount and then the flour amount. OOps! Now the batter tastes like flour. The batter is too wet, it tastes wrong, now it tastes like baking soda. Sheesh! No wonder you can not find peanut butter cookies that are soft.

Two years later I finally had success. A soft peanut butter cookie with a flavor and texture that will knock your socks off. It took a long time and many trial batters but I found the perfect combination of ingredients to make them soft. Softness is an important factor for me when it comes to cookies as I know it is for many people. I know there are a few people out there who prefer crunchy cookies but the majority of people do prefer soft cookies.

Another factor that many consumers find important with cookies is for the cookie to have body to it and lift. This was my next challenge. My cookies were a little flat. I spent a lot of time and many trials to get the cookies to lift more. Again, I adjusted the baking soda amount and had no luck. I started playing with the baking temperatures and the location of the baking sheets in the oven still to no avail. Finally, I lessened the amount of shortening in my recipes and had success. My cookies had lift and more body and more texture.

The most important thing to remember when embarking on quests such as these is the pride you have in your abilities to bake and create such incredible flavors to provide pleasure for others. When you take pride in what you do, it shows in the final product and you take more care with what you do resulting in a higher quality product.

Cake and Cookie Baking Tips for Beginners

Are you new to baking cakes and cookies? Not sure how to read and follow recipes? Here are some baking tips to get you started.

All ingredients should be at cool room temperature.

Unless the recipe states otherwise, use unsalted butter. If you have only salted butter on hand, reduce the amount of salt in the recipe by 1/4 teaspoon per stick of butter. Use regular butter, not whipped, and don't substitute margarine unless the recipe gives it as an alternative.

Unless otherwise stated, eggs used in baking recipes should be the large size.

Use dry measures for dry ingredients and wet measures for liquid ingredients. Measuring cups for dry ingredients come in individual sizes (1/4 cup, 1/3 cup, 1/2 cup, 1 cup). You fill the cup completely with the flour or other dry ingredient and level it off. Liquid measures are marked with lines for various amounts (1/3 cup, 4 ounces, etc.), with some space at the top so the liquid doesn't spill. You pour the liquid in up to the desired line.

To measure flour, stir up the flour, then swoop the measuring cup into the flour, and level the flour even with the top of the cup using a knife or the side of your hand. To measure sugar or cocoa, spoon it into the cup. To measure brown sugar, spoon it into the cup and pack it down with the back of the spoon. When measuring sticky ingredients such as molasses or honey, lightly oil the inside of the cup first.

You must sift flour for cakes and confectioners' sugar when you're using it in icing. For cakes, sift the flour, measure it, then sift it again with the dry ingredients. You don't need to sift flour for pies or most cookies.

Chocolate must be melted over low heat or it will burn. You can melt it in the top of a double boiler (a pan with two parts; the top sits in the bottom pan, which contains boiling water). You can also put it in a microwave-proof container and heat on 80 percent power for 1 minute. It should still be lumpy when you remove it; keep stirring until it is smooth. If it is still lumpy, return it to the microwave and heat in 10-second increments on 80 percent power until smooth.

To cream butter (with or without the sugar), beat it at high speed on an electric mixer for about 2 minutes, or until it is fluffy.

If a recipe tells you to fold in egg whites or cream, it means to spoon the egg whites or cream over the batter, then move a rubber spatula in a circular motion from the bottom of the bowl to the top of the batter, "folding" in the whites or cream. You can also use a wire whisk to gently whisk in the eggs or cream.

Use the size of pans indicated in the recipe.

Always turn the oven on for at least 15 minutes before you will be using it, so it has time to reach the proper temperature.

Baking (cookie) sheets come with and without sides. Some recipes refer to a baking sheet with sides as a jelly-roll pan. Cookies bake the most evenly on a cookie sheet without sides, but it's OK to use one with sides.

Space drop cookies at least 1 1/2 inches apart on the baking sheet so they have room to spread.

Most cookies should cool on the baking sheets for a minute or two to "set" before they're removed to wire racks to cool completely. Cakes should cool completely in the pan before being inverted onto a plate or cardboard round. Run a knife between the cake and the sides of the pan first to loosen it.

HERSHEY'S DOUBLE CHOCOLATE MINI KISSES COOKIES

2 sticks butter, softened
1 1/2 cups sugar
2 eggs
2 tsp vanilla extract
2 cups all-purpose flour
2/3 cup Hershey's cocoa
3/4 tsp baking soda
1/4 tsp salt
1 3/4 cups (10-oz pkg) Hershey's Mini Kisses Milk Chocolate
1/2 cup coarsely chopped nuts, optional

Preheat oven to 350 degrees.

In a large bowl, beat butter, sugar, eggs, and vanilla together until light and fluffy. Stir together the flour, cocoa, baking soda and salt. Add the flour mixture to the butter mixture, beating until well blended. Stir in the mini kisses and the nuts, if using. Drop by tablespoonfuls onto ungreased cookie sheet. Bake at 350 degrees for 8 to 10 minutes or just until set. Cool slightly; remove from cookie sheet to a wire rack to complete cooling.

Yield: About 3 1/2 dozen cookies.

VERY CHOCOLATE COOKIES

1 3/4 cups all-purpose flour
1 1/2 cups sugar
2/3 cup cocoa powder
3/4 tsp baking soda
1/4 tsp salt
3/4 (1 1/2 sticks) cup butter, softened
2 eggs
2 tbsp plus 1 tsp milk
1 tsp vanilla extract
2 cups (12-oz pkg) chocolate chips
1 cup chopped nuts

Preheat oven to 350 degrees. Line cookie sheet with parchment paper.

Stir together flour, sugar, cocoa powder, baking soda and salt in a large mixing bowl. Add butter, eggs, milk and vanilla; beat until well blended. Stir in chocolate chips and nuts. Drop dough by heaping teaspoonfuls onto prepared cookie sheet. Bake 9 to 11 minutes or just until set. Do not overbake. Cool slightly then remove to a wire rack to cool completely.

Yield: 3 to 4 dozen cookies

Easy to Make Pecan Turtle Cookie Bars Recipe

Pecan turtle bar cookies have been a favorite in our household for over 15 years. This recipe takes less than 30 minutes to make and is made from common every day ingredients.

It starts off with a layer of buttery crust, then accented with the nutty taste of pecans and finally topped off with a delicious layer of chocolate. Once they are cooled and cut into bars, you will want to store them in an airtight container.

Crust Ingredients:

2 cups all-purpose flour
1 cup brown sugar, firmly packed
1/2 cup butter, softened

Caramel Layer Ingredients:

2/3 cup butter, softened
1/2 cup brown sugar, firmly packed
1 cup whole pecan halves
1 cup milk chocolate morsels (chocolate chips)

Preheat oven to 350 degrees.

In a large mixing bowl, cream together the all-purpose flour, brown sugar and softened butter until creamy and fluffy. Press the crust ingredients inside a 13 x 9" baking pan. Sprinkle the pecan halves evenly over the crust.

For The Caramel Layer: In a large mixing bowl (you can reuse the first bowl), cream together the softened butter and brown sugar until creamy. Pour mixture into a 2 quart saucepan and cook over low heat, stirring constantly until it boils; remove from heat. Pour this mixture over top the pecan layer in your baking pan. Bake in a 350 degree oven for 16 to 18 minutes or until done.

Remove the baking dish from the oven and immediately sprinkle the milk chocolate chips over top so that they melt. Using a silicone spatula, swirl the melted chocolate around to give it a marbled effect.

Let the cookies completely cool and then cut into bars.

Santa Claus pays a visit to your table in these delightfully cute cookies.

1 cup butter

1/2 cup sugar

1/2 cup brown sugar

2 tablespoons milk

1 teaspoon vanilla extract

2 1/2 cups flour plus additional for rolling

Royal Packaged Icing Mix

Red food coloring

Pastel candy dots

Directions

Preheat oven to 375 degrees.

Place butter in a bowl and cream until nice and fluffy. Gradually beat in sugar and brown sugar until light and fluffy. Mix in the milk and vanilla. Add in flour; mix thoroughly. Chill dough for 1 to 2 hours or until it is easy to handle.

Work with 1/3 of the dough at a time and leave rest in the refrigerator until ready to use.

On a lightly floured surface, roll out dough to 1/4-inch thickness. Take a Santa shaped cookie cutter and dip it into flour, then cut out Santa faces. Place cookies on an ungreased cookie sheet.

Bake for 10 to 12 minutes or until just golden brown. Let cool on cookie sheet for 1 minute. Remove from cookie sheet and cool completely.

Prepare the royal icing according to package directions. Color half the icing red and leave the other half the original color. Using a icing bag or plastic bag with a hole cut in it, pipe a red Santa hat on each cookie. Follow up with white icing for Santa's beard, eyes and hat pompom.

Place a candy decoration in the center of each white eye. Allow icing to set before serving.

Makes 18 to 24 cookies.

1 (16 oz.) package Nutter Butter Cookies

1 1/4 pounds white candy coating, melted

Miniature chocolate chips

M&M miniature baking bits

Pretzel sticks, halved

Orange and red decorating gel or frosting

Directions

Using tongs, dip cookies in candy coating; shake off excess. Place cookie on waxed paper.

To decorate: Place two chocolate chips on one end of cookies for eyes. Place baking bits down middle for buttons. For arms, dip ends of two pretzel stick halves into coating; attach one to each side.

Let stand until hardened. Pipe nose and scarf with gel or frosting.

Makes 32 cookies.

1/2 cup butter, softened

1/3 cup sugar

1 egg yolk

1/2 teaspoon peppermint extract

1/4 teaspoon salt

4 to 8 drops red food coloring

36 chocolate kisses

Directions

Preheat oven to 350 degrees.

In a large mixing bowl, cream the butter and the sugar. Add in the egg yolk, peppermint extract and vanilla extract; mix well.

In a separate bowl, combine the flour and salt; gradually add to creamed mixture.

Divide the dough into two sections. Tint one section red. Divide the dough into four sections. You should have two red sections and two regular sections. Cover and refrigerate for 1 hour.

Shape each section into a 9-inch log. Place one plain log next to one red log. Gently twist the plain and red logs together and create one swirled log. Repeat with the other two logs.

Cut each log into nine slices; roll each slice into a ball. Place each slice 1-inch apart onto an ungreased cookie sheet. Flatten slightly with a glass.

Bake 10 to 12 minutes, or until edges are lightly browned. Press a chocolate kiss candy piece into each cookie center, while cookies are still warm. Let cool.

Makes 36 cookies.

Have you ever dyed cookie dough and found it incredibly hard to get it evenly incorporated into the dough? I have! And trust me if you have not had that experience, it's not fun and really frustrating. Plus, when you are kneading the dough trying to incorporate the color, your hands get dyed with the coloring (if you are not wearing gloves), your hands start to hurt and your cookies come out spotty or marbled. So, this simple method should solve those problems for you.

Recently while making our annual plethora of Christmas cookies, my mom and I discovered that there is a much easier and simple way to dye your cookie dough and have the dough come out evenly colored. It is so simple that I wonder why I never thought of it before when it was staring me in the face. What is this method that I have to know, you ask. Well, let me tell you.

While you are assembling all your ingredients and you have your dry ingredients and your wet ingredients ( eggs, milk, extracts, etc.), simply add your food coloring into your wet ingredients. You can even give your wet ingredients a little stir to incorporate the food color to make sure that it's thoroughly dispersed and mixed in. And there you have it, a simple and quick way to have evenly colored dough!

Note though, that some recipes you can not add the coloring in to the wet because you simply have no choice and it might alter the consistency or the final product of the cookie dough.

I remember getting excited whenever we would get a box of Velveeta because that meant we would be getting one of mom's refrigerator cookie recipes. She would always put the refrigerator cookies in the Velveeta boxes in the refrigerator. Probably a use for those boxes that we would never even think of today. It, of course, makes the cookies square, which allows for easier packing into containers. It also means that you do not have to mess with trying to get the cookies into a perfect roll. Also no danger of the kids putting something on top of the cookies and smashing them. I always liked coconut so the oatmeal refrigerator cookie recipe was one of my favorites.

Oatmeal Refrigerator Cookies

Cream together the sugars and the shortening in a large bowl. Add the eggs and vanilla to the creamed mixture. Sift the dry ingredients (flour, baking soda, and salt) into the creamed mixture. Mix in the oatmeal, nuts, and coconut. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. The next day take the refrigerator cookies out and slice them (about 1/8 inch thick). Then place the cookies on cookie sheets and bake in a 375 degree oven for 10 minutes.

Peanut Butter Refrigerator Cookies

Mix together the butter and peanut butter in a large bowl. Add the brown sugar to this mixture. Add in the egg and mix well. Alternate adding the dry ingredients (flour, salt, and baking soda) with the evaporated milk. Put wax paper or plastic wrap into Velveeta boxes and push the cookie mixture into the boxes. Refrigerate the cookies overnight. The next day take the refrigerator cookies out and slice them (about 1/8 inch thick). Then place the cookies on cookie sheets and bake in a 375 degree oven for 10 minutes.

If you work outside of the home, this is a great cookie recipe to throw together on Friday night. Then you can have a fun time baking the cookies with your kids on Saturday.

Easy Cookie Bouquets

Surprise a friend (or your mom) with an easy-to-make cookie bouquet. Use your imagination to create a gift that special someone will really enjoy.

All you need to get started is a basic sugar cookie recipe like this one from our recipe database:

Best Sugar Cookies

2 cups sugar

2 cups margarine or butter

3 eggs

1 tsp. lemon extract

1 tsp. salt

3 tsp. baking powder

6 cups flour

Cream together first 4 ingredients. Mix remaining dry ingredients together and mix in with the creamed mixture. Add enough flour to handle dough. Roll cookies out on floured board and cut with your favorite cookie cutters. Bake 350 or 375 degrees for 8-10 minutes until lightly browned on the outside edges.

For a flower bouquet, use flower-shaped cookie cutters to cut out cookies. Roll cookie dough 1/2 inch thick to accommodate popsicle or lollipop sticks. Gently insert stick into cookies before baking. You may need to bake an extra minute or two because of the thicker dough. Watch closely while baking.

After cookies cool, frost with your favorite frosting and/or outline cookies with decorator icing.

Wrap cookies in saran wrap or small cellophane gift bags. Tie a ribbon bow around each cookie. Arrange cookie pops in a terra cotta pot with styrofoam in the bottom to hold cookies.

Why do bakers and homemakers alike love using quinoa flour? Well simply because it adds chewiness and nutty flavor to baked goodies and for some reason, the end product seems to be really moist. Now don't you love that as well? I do!

What I love about quinoa is its high-protein content and because of its gained popularity, people have come up with thousands of delicious recipes and quinoa-derived products like cereal and flour. It can either be made from milled or unmilled grains and the color is usually creamy yellow or ivory. Quinoa is gluten-free so this is perfect for people with gluten intolerance. If you are purchasing processed quinoa products make sure it has the "gluten-free" markings otherwise it can be contaminated.

Cookie Recipes For Kids

I like the quinoa crispy cookies and for this recipe you will need:

1 cup quinoa flour
¾ cup quinoa flakes
½ cup brown sugar
½ cup honey
½ cup butter
½ cup almond butter
½ tsp vanilla extract
1 teaspoon baking soda
¼ teaspoon salt
½ cup chopped walnuts/pecans (or any nut that you prefer)

Mix together honey, brown sugar, butter, nut butter and vanilla. Make sure it turns out to be creamy. In a separate bowl, combine quinoa flour, quinoa flakes and baking soda. Add the dry mixture to the cream mixture and beat until everything is well blended. Add nuts and drop rounded teaspoons of the cookie mixture about 2 inches apart onto ungreased cookie sheet. Bake it for 12-15 minutes at 350 degrees F. Let the cookies cool for at least 2 minutes before removing them from the sheet. Makes about 3 dozen small cookies. Enjoy!

Biscochito Cookie recipe

The Biscochito cookie formula is a original Mexican cookie made with anise seed. regularly they are rolled and cut into varied shapes, but this formula uses the simpler drop cookie method.

Ingredients

Easy Cookie

2 1/4 cups all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

2 1/2 teaspoons anise seeds

3/4 cup packed light brown sugar

3/4 cup granulated sugar

2 sticks (1 cup) salted butter, softened

2 large eggs

2 teaspoons brandy

Topping:

1/4 cup granulated sugar

2 tablespoons ground cinnamon

Medium bowl

Small bowl

Cookie sheets

Mixer

Step 1: Preheat oven to 3oo degrees F.

Step 2: In a medium bowl, whisk together the flour, baking soda, salt, and anise seed; set aside.

Step 3: In a large bowl, blend sugars together with an electric mixer.

Step 4: Add butter and mix until grainy.

Step 5: Add eggs and brandy and beat at medium speed until light and fluffy.

Step 6: slowly add the flour compound and mix at low speed until just combined.

Step 7: In a small bowl mix together 1/4 cup granulated sugar and 2 tablespoons ground cinnamon.

Step 8: Roll rounded tablespoons of dough into 1-inch diameter balls and then flatten slightly with drinking glass or spatula.

Step 9: Press tops into sugar-cinnamon mixture, then place cookies lowest side down on ungreased cookies sheets 2 inches apart.

Step 10: Bake for 22-24 minutes or until cookies are slightly brown around edges. change cookies immediately to a cooling surface.

Makes 36 cookies.

In a large bowl beat together butter, peanut butter, brown sugar, and vanilla with an galvanic mixer until creamy. Beat in eggs and water.

In a medium bowl stir together flours, oats, wheat germ, salt, cinnamon, and baking soda. Mix flour combination into peanut butter mixture. Stir in raisins.

Drop by ice cream scoopfuls (or 1/4 cup measuring cupfuls )2 1/2 inches apart on greased cookie sheets. Flatten slightly.

Bake for 18 to 20 minutes until golden but still soft.

There are so many Christmas cookie recipes around but often so minute time to bake while the busy holiday season.

The solution? A great tasting basic cookie method that fast and in effect turns into such a collection of easy to make Christmas treats, friends and family will think you poured over all your favorite Christmas cookie recipes.

Easy Cookie

Let's start with the basics.

Basic Cookie Dough Recipe

1/2 cup (or 1 stick) butter (or margarine) at room temperature

1/2 cup brown sugar, lightly packed

2 tablespoons sugar

1/2 teaspoon baking powder

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

In a large bowl, merge all the ingredients except the flour. Beat with an electric mixer, scraping the sides of the bowl some times, until the combination is light and fluffy. With mixer at a low speed, add the flour gradually, beating just until everything is well blended.

Place the combination on a baking sheet using a tablespoon quantum and press down with a spoon to flatten a bit. Or roll our and cut into shapes with a cookie cutter. Bake at 350ºF for about 12 to 15 minutes, until golden.

This basic cookie combination is also the base for the following cookie recipes (all baked in a preheated oven at 350ºF).

Orange Cookies

(Makes about 32)

Add 1 tablespoon of grated orange zest to the recipe. Shape into a log that is about 1 1/2" in diameter and refrigerate for 4 hours.

Slice dough into 1/4" thick slices. Place on cookie sheet. Cookies can be decorated with candies, rolled in colored sugar, or cut into pretty holiday shapes before baking. Bake in preheated oven for 12-15 minutes, until lightly browned.

Cherry Coconut Chocolate Squares

(Makes about 54 squares)

In addition to the basic dough you will need:

1/4 cup unsweetened cocoa powder

3 large eggs

1 1/2 cups granulated sugar

1 teaspoon almond extract

1/2 teaspoon baking powder

3 cups flaked coconut

1/2 cup maraschino cherries, well drained and coarsely chopped

Line a 13"x9" baking pan with foil.

Stir cocoa powder into basic dough mixture. Press evenly into the prepared pan. Bake for 10-15 minutes or until the crust looks dry.

In a medium bowl whisk together eggs, sugar, almond extract and baking powder until well blended. Stir in coconut and cherries. Pour over the baked crust.

Bake for 30-35 minutes, until top just begins to brown and a toothpick inserted near the center comes out clean. Cool in the pan on a wire rack. Lift it out on to a cutting board using the foil ends and cut into 1 1/2" squares. Squares can be stored in an airtight package for up to 3 weeks.

Coconut Pineapple Cookies

(Makes about 36)

In addition to the basic dough you will need:

1 1/2 cups sweetened flaked coconut

1/3 cup pineapple preserves (use raspberry or apricot if you prefer)

Add 1 cup of the flaked coconut to the basic dough combination and mix well. Shape the dough into 1 1/2" balls and roll in the remaining coconut to coat them. Place the balls 1" apart on lightly greased cookie sheets. Make a deep indentation in the center of each cookie with your fingertip.

Bake for 12-15 minutes until the cookie is firm and the coconut is lightly toasted. When cooled, fill each hole in the center of the cookies with the preserves.

You can vary this basic dough to make a wide collection of Christmas cookie recipes. Add other flavorings like maple, ginger or cinnamon. Add chopped dried fruits like apricots or dates. Or bake them plain in holiday shapes and decorate with colored icing.

Chocolate Cookie Recipes (Fun to Make With the Kids)

One of the best ways to make memories with your children or grandchildren is to allow them in the kitchen with you. Kids love to bake and they enjoy eating and sharing with others the goodies they make. It is also a fun studying perceive for them, one they don't even realize is a lesson. Homemade Chocolate Sandwich Cookies

1/2 cup butter or oleo
1 cup sugar
1 egg
1 tsp vanilla
1 cup milk
2 cups flour
1/2 tsp baking powder
1 1/2 tsps baking soda
1/2 tsp salt
1/2 cup cocoa

Preheat oven to 400 degrees.

Mix all ingredients together in the order given. Beat until smooth. Drop by rounded teaspoon on buttered cookie sheet. Bake at 400 degrees for 7 minutes. Do not over bake. Cool and make sandwiches using the filling recipe below.

Marshmallow Filling:

1/2 cup white shortening
2 cups powdered sugar
1 cup marshmallow cream
1 tsp vanilla
3 or 4 tsps milk (adjust estimate for the right consistency)

Cream shortening and sugar together and mix in rest of the ingredients. Spread in the middle of cookies and make sandwiches. Wrap individually in plastic wrap to store so they won't stick together.

Chocolate Dunk Cookies

1 3/4 cups flour

3/4 tsp baking soda

1/4 tsp salt

8 squares semi-sweet baking chocolate, divided

3/4 cup margarine, softened

2 tbsp firmly packed Splenda brown sugar blend Or 1/4 cup firmly packed brown sugar

3/4 cup Splenda granular

1/4 cup egg substitute

1 tsp vanilla extract

1 cup chopped nuts

Preheat oven to 375 degrees. In small mixing bowl, mix together flour, baking soda and salt. Set aside. Coarsely chop 5 squares of the chocolate and set aside. In a large mixing bowl, beat margarine, brown sugar, and Splenda with galvanic mixer on medium speed until light and fluffy. Add egg substitute and vanilla extract; mix well. Gradually add flour compound to egg compound beating until blended. Stir in chopped chocolate and nuts. Drop by heaping teaspoonfuls onto ungreased baking sheets. Dough drops should be two inches apart. Bake 11 to 12 minutes or until lightly browned. Cool 1 petite before removing from cookie sheets. Cool wholly on wire racks. Melt 3 squares of chocolate in microwave as directed on package. Dip one half of each cookie into the melted chocolate. Place in particular layer on waxed paper and let set until chocolate is set.

Note: This recipe uses some ingredients that make it diabetic friendly. You can make the following changes, if you do not have diabetics in your family: Substitute 1 egg for the egg substitute and 3/4 cup granulated sugar for the Splenda granular.

Easy Cookie Recipes For Kids

>>Sliced Almond Cookie

1 c sliced almonds chocolate bits; for topping

1 egg whites

1/3 c sugar

Preheat the oven to 300. Line a cookie sheet with parchment paper. Stir together the egg white and sugar (I don't even use a mixer) and then stir in the almonds. Drop by teaspoon (they shouldn't be more than
2 inches in diameter) and top with a chocolate chip. Bake about 20 minutes until lightly browned. When you remove from the oven mash down the chocolate bit (it makes it look like a dab of icing) and let it cool before removing from sheet.

I use the same ingredients in the food processor and make balls out of the dough just over an inch in diameter. I flatten them slightly by pushing down drained maraschino cherry on top. I usually do double the recipe. I make these all year because they're so simple to make, everybody loves them and they are good for pesach.

>>Chewy Role Cookie Bar

1 pk yellow cake mix

1/2 c nuts, chopped

1/4 c butter, melted

2/3 c evaporated milk

36 role candy pieces, halved

Combine cake and nut meats in a medium bowl. Stir in evaporated milk and melted butter or margarine. Blend well. Spread half of cake mixture into a greased 9x13 inch pan. Bake at 350 degrees for 15 minutes. Remove from oven.

Immediately place role pieces, cut side down, over hot crust. Drop remaining cake mixture by teaspoonfuls over role pieces. Bake at 350 degrees for 25 to 30 minutes or until lightly browned. Cut in squares.

Ingredients:

One teaspoon of salt

One teaspoon of baking soda

Three fourths cup of white sugar (granulated) Three fourths cup of brown sugar (packed)

One cup (or two sticks) of unsalted butter (softened)

Two large eggs

Two and one fourth cups flour (all purpose works well)

Directions:

Preheat your oven to three hundred and seventy five degrees Fahrenheit. While the oven is pre-heating, mix together one teaspoon of baking soda, one teaspoon of salt and two and one fourth cups of flour together in a small bowl. In a large bowl, beat together the one cup (or two sticks) of softened unsalted butter together with three fourths cups of white sugar, the three fourths of a cup of brown sugar and the teaspoon of vanilla flavoring (or extract). Beat the ingredients together until they are creamy.

Once you have made a creamy mixture add the eggs one at a time and make sure they get beaten in thoroughly before adding in the flour mixture. Slowly add in the flour, salt, baking soda mixture until you have formed a slightly firm and smooth cookie dough. Stir in the chocolate chips (most easy chocolate chip cookie recipes recommend two cups' worth, but you can add as much or as little as you want). Next, use a teaspoon to drop blobs of cookie dough onto cookie sheets. Make sure the drops are a couple of inches apart and then bake each sheet for nine to ten minutes at a time. Cool the cookies for ten to fifteen minutes after they are taken out of the oven.

Delicious Nutella Cookie Recipe

Nutella Cookie Bar is also one of the favorites. To make this cookie, prepare the cookie ingredients which include one and a half sticks of softened butter, three-quarter cup of brown sugar, three-quarter cup of white sugar, two eggs, one teaspoon of vanilla, half teaspoon of salt, one teaspoon of baking soda, 13 ounces jar of Nutella, one pound bad of M & M's and four to eight candy bars, depending on your preference. The cookies should be baked at 350 degrees Fahrenheit for 10 to 12 minutes.

Another Nutella cookie recipe is the Nutella Cherry Oat Bars. Here you will need half cup of softened butter, one egg, necessary of light brown sugar, necessary sugar, one teaspoon of vanilla extract, one and a quarter cups of flour, a quarter teaspoon of salt, half teaspoon of baking powder, half cup of Nutella, a quarter cup of chopped hazelnuts, one and oats and three-quarter cup of preserved cherries.
